Cook garlic. In a large skillet, cook minced garlic for about a minute, until fragrant. Cook ground beef. Add ground beef too pan and sprinkle with salt and pepper to taste. Increase heat to medium high and cook until browned. Cook zucchini. Add zucchini to pan and cook until zucchini is starting to soften and golden.

TIP: Don’t overcook the zucchini or it will end up mushy!

Finish ground beef and zucchini. Remove from heat and stir in basil pesto. Toss with goat cheese and fresh parsley.
